If you can find a food grade 55 gallon steel drum with no inside coating you can make what is called an "Ugly Drum Smoker" that works like the Weber Smokey Mountain.

You still suck. Can you take a pic of the whole smoker? I was gonna cook over the open fire tonight but the wind came up and right now fires aren't in good favor in Alberta.

Have you tried a fire pit ? I dug one about 2' diameter about 8" deep ( 3 of the common red bricks deep) it seems pretty contained to about 15 mph winds maybe 20.

Lol.... tonights feast was on a regular barrel grill...it's dark now, I'll try and take a pic this week...

The kamado can clock upwards of 500 degrees easily. Great for searing or making pizza or low and slow brisket :thumbup: . Try searching roti

Ohhhh I bet that's one of those Thick clay grills.....ill goggle it later.. Those puppies are awesome. Over my pay grade though...... now if we see $1800 gold again I may splurge.... :thumbup:

Thanks DRP270, and Pitw I will use most of these peppers in dry rub for my smokin and grillin. Dehydrate them crush them up and put them in a pepper grinder....They are to hot to eat Raw but the flavor they give cooking is AWESOME....

Sliced potatoes and onions and carrots on buttered foil. Fold up and seal. I put that on a 375 smoker about 25 minutes before I put a chicken leg quarter on to cook. Both should be done about the same time... lazy food...

Beanmaster strikes again. Doing Christmas dinner today for with Stepfamily. Habenero baked beans, Seasoned Limas and smoked sausage, and good Ole bacon greased flavored string beans and potatoes!

Cod Fillet was on sale in my local supermarket, bought a nice sized fillet, portioned it and because i have recently been hot and cold smoking Salmon, i decided to give the Cod a go hot smoked.

Gave it a quick cure in ref with a light coating of sea salt uncovered for 3 hrs then rinsed and Hot smoked on my gas smoker with Oak pellets using the AmAzeN smoker inside the big one. Sill moist and just right on the smoke :D

It was supposed to be my wife's Shrimp Alfredo (with vegetables) and bbq Tenderloins for Christmas dinner, but she forgot to tell us that she ordered catered food. The steaks were already marinated so they weren't going back in the freezer. ;) :lol:
