This is how we do it. BBQ Alligator! This is a buddy of mine who does a local fishing and cooking show every week.

Here is another weekly TV cooking show made in my home town. I cant believe some of the things Marissa and her sister talk about on this one, they get kinda racy with some overt comments. I like when she shows the Meliton and hints at what it resembles. " You wanna see my Veggetti?"
I'll never eat Red snapper again and not think of this

I worked down in Leesville, La about 30 yrs ago. They sold hot Boudin at the gas stations like they sell corndogs and chicken up here. Pork, shrimp, gator...They even had Boudin on pizzas. Drooling!

We were lucky to get a new Bergerons store/resttaurant in the small town near me, the lunch time crowd is just about standing room only and the freezers are full of everything imaginable

I used to have to drive to Port Allen ( Across the river from Baton Rouge)

I was a Board Operator for BASF corp and the contractor workers used to come into the control room first thing in the morning with boxes of Bergerons Boudin to get on our good side

Barksdale is where I enlisted and took the oath when i joined the Marine Corps.
Marines who enlisted on the east side of the Mississippi River went to Parris Island, S.C. Boot camp so i crossed the river bc i wanted to go to San Diego.

There's a gas station just outside of Natchitoches, LA that sells some incredible boudin. You can get it mild or spicy & plain or fried. And the meat pies are freakin' awesome.

I've got some baby back ribs cooking in the oven. I found tons of recipes on YouTube, but use the easiest one. Basically ribs cut individually and give a quick light citrus marinade, and rub with a brown sugar, salt, pepper, paprika, chili powder, garlic powder/salt, oregano mix. Cook in an alluminum pan covered in foil meat side down at 250-300 for 2 1/2 hours, then put BBQ sauce if desired and cook under broiler for about 5 minutes.
They don't look particularly awesome (without sauce) but come out super moist and falling off the bone.

Little bit of ground Idaho Elk just lightly browned in a bit of bacon grease and finished with coarse sea salt. Mmm mmm
